Healthy Pumpkin Bread

The Best Healthy Pumpkin Bread ever!

This pumpkin bread came out so delicious with just the right amount of sweetness!

With NO refined flours, sugar, or oils.

Ingredients:

3 cups rolled oats or (2.75 cups oat flour)

1 cup pumpkin puree

1/4 cup Unsweetened Milk

3/4 cup maple syrup or honey

2 eggs

1 tbsp pumpkin pie spice

1 tsp ceylon cinnamon or more

½ teaspoon pink salt

¾ teaspoon baking soda

½ teaspoon baking powder

pumpkin seed or chocolate chips to top

Instructions:

- Preheat oven to 350F

- In a large bowl, whisk together wet ingredients: maple syrup or honey, eggs, pumpkin puree, and unsweetened vanilla almond milk.

- In a large bowl, Add dry ingredients: oat flour, pumpkin pie spice, cinnamon, salt, baking soda, and baking powder. Mix to combine evenly.

- Add the wet mixture to the flour mixture and mix until totally combined. Let the mixture sit for five minutes.

- Mix in chocolate chips or walnuts if preffered

- Line a glass bread dish with parchment paper or just coat it with some butter or coconut oil

- Pour mixture onto the dish and top it with some pumpkin seeds

- Bake for 40-45 minutes until inserted toothpick comes out clean.

- You may want to wait until it cools before digging in to ensure it doesnt crumble.

To Make this recipe Gluten-Free: Substitute the Oat flour with a GF flour of your liking, or use Gluten-Free oat flour

To Make this recipe Vegan: Replace one egg with 1/4 cup of applesauce, and double. OR Flax eggs (The basic ratio is one tablespoon of flax seeds and three tablespoons of water to replace one egg. You'll need to grind the flax seeds into a fine powder using a coffee or spice grinder (or use 2 1/2 teaspoons pre-ground), and then you simply whisk in the water until it becomes gelatinous).
